Sustainable Blue Shrimp & Cocktail Sauce

Total Time: 15 mins (plus 1 hr thawing time)
Thaw shrimp overnight in the fridge, or for same-day use, submerge the sealed plastic package of shrimp in a bowl of cool water. Change the water out every 15-20 minutes until shrimp are fully thawed, about an hour total.
Bring a large saucepan or pot of generously salted water (about 1 heaping tbsp of salt per quart of water) to a boil, then turn down to a simmer and add thawed shrimp. Cook for just 25-35 seconds; they should turn from translucent blue to opaque pink. Scoop out of the water with a strainer and run cold water over the shrimp to stop them cooking. Serve with cocktail sauce!
