- Fresh Organic Shiitake Mushrooms from Far West Funghi, 6 oz container
Recipe: - 1 pound shrimp
- 1/4 teaspoon freshly ground pepper
- 1 medium zucchini
- 1 small yellow summer squash
- 1 onion
- Mushrooms
- 1/2 cup chopped fresh flat-leaf parsley
- 2 minced garlic cloves
- 1/4 cup extra-virgin olive oil
- 2 teaspoons fresh lemon juice
- 3/4 teaspoon coarse salt
Directions:- Soak 12 wooden skewers in water for 30 minutes to prevent charring.
- Make the shrimp: Heat grill to high and brush grates with oil. Thread shrimp onto skewers, alternating with vegetables. Season with salt and pepper and grill for 7 minutes total, flipping every minute. Whisk together parsley, fresh lemon juice, garlic cloves, extra-virgin olive oil and coarse salt. Drizzle sauce over kebabs.
