Parcooked potatoesStep 1
Preheat the oven to 450°F. Line a sheet pan with foil. Arrange the potatoes over one half of the lined tray, and drizzle with 1 tbsp olive oil and a few pinches of salt. Each potato should be lightly coated with oil!
Step 2
Roast in the oven for 15-20 minutes, until the potatoes turn slightly brown.
Step 3
When the potatoes begin to brown, pull the pan out of the oven and arrange the trout filets skin side down over the empty half. Sprinkle with a few pinches of salt and freshly ground black pepper, and return the sheet pan to the oven to bake for 4-5 minutes or until the top of the filet turns from red to light pink.
Step 4
Remove from the oven and check the fish for doneness — it should no longer be translucent and should flake easily. Serve the fish alongside the potatoes with a spoonful of chermoula and lemon, cut into wedges! We like to serve with a salad on the side.
