Notes From The Producer

Ragu with handmade pappardelle is a classic Italian dish, but takes hours to prepare. Our house-made ragu uses pork and beef from Sonoma County Meat Company and fresh pappardelle from The Pasta Shop to give you a comforting meal in minutes.

What You’ll Need

Salt
Olive oil


Step 1: Bring a large pot of salted water to a boil and cook pasta according to instructions on the sticker (about a minute). Reserve ¼ cup of pasta water before straining and set aside. Toss pasta with a bit of olive oil if not using immediately to prevent sticking.

Step 2: Give the parsley leaves a rough chop and set aside for finishing the pasta.

Step 3: In a medium pot over medium heat, reheat the ragu with a splash of water until warmed through. Add the cooked pasta to the ragu along with half of the cheese and reserved pasta water. Turn the heat down to low and toss the pasta until the sauce thickens.

Step 4: Finish pasta with a drizzle of good olive oil, parsley and a sprinkle of cheese. Serve with a side salad!
