Here’s a shortcut: layer mushrooms on raw, then drizzle with olive oil so they cook while the pizza crust bakes. You’ll get a vegetarian pizza on the table with time to spare. Makes 3 servings.
Ingredients:
12 oz pizza dough (enough for one 12-14” pizza), thawed at room temperature for about an hour
6 oz tomato sauce
8 oz mozzarella
8 oz crimini mushrooms, thinly sliced
Basil, roughly chopped
You probably have:
Olive oil
Chile flakes
Instructions:
Step 1: Preheat oven to 500ºF, or its maximum temperature. Stretch and roll out the pizza dough on a floured surface until it’s about a 12-14” round, and lay it on an upside-down baking sheet or pizza stone.
Step 2: Spread tomato sauce over pizza dough, leaving about an inch around the edge for the crust, then layer on sliced mushrooms and mozzarella. Drizzle with olive oil.
Step 3: Bake pizza for about 10 minutes, or until golden brown and crispy. Top with freshly chopped basil and chile flakes (if you dare)!
