Straight from Maggie Hoffman’s new book, “The One-Bottle Cocktail: More Than 80 Recipes with Fresh Ingredients and a Single Spirit,” this take on a margarita from Kamil Foltan gets a caramelly richness from aged tequila, bumped up with charred lemon halves.

Honey
Step 1
Mix ¼ c honey and 2 tbsp hot water and stir until combined. Set aside.
Step 2
Heat a drizzle of olive oil in a skillet over medium-high heat. Halve two lemons, and slice the remaining lemon into rounds.
Step 3
Place halved lemons cut side down in the skillet. Add lemon wheels, and cook until lemon flesh is browned, about 4 to 6 minutes. (There’s no need to cook both sides of the wheels.) Remove from heat and let cool to room temperature.
Step 4
Juice caramelized lemon halves and measure out 2 ounces grilled lemon juice. Combine measured lemon juice, 4 ounces tequila, and 1 ¼ ounces honey syrup in a cocktail shaker and fill with ice. Shake until well chilled, about 15 seconds. Strain into 2 chilled coupe glasses or ice-filled rocks glasses and garnish with grilled lemon wheels and a rosemary sprig!
