Product Details

Fresher and milder than regular cloves, green garlic smacks of spring. It layers flavor into this comforting bean soup, with a burst of lemon and a flurry of fresh herbs.

Spring onion or shallot

Rapini or escarole (see note below)

Turnips

Mushroom broth (see note below)

Cooked corona beans

Cooked Israeli couscous

Parsley

What You’ll Need

Olive oil

Salt and freshly ground pepper

Grated Parmesan cheese (optional)


Makes 3 servings

Step 1

Trim and slice the green garlic (you should have about 1 cup). Reserve 1 tablespoon of the green garlic for sprinkling. Slice 1 spring onion, including the top. Wash and thinly slice the rapini (about 4 cups; reserve any remaining for another use). Cut the turnips into bite-size pieces (about 1 cup).


Step 2

In a large pot over medium heat, warm 3 tablespoons olive oil. Add the green garlic and spring onion and sauté until soft but not browned, about 3 minutes. Turn up the heat to medium-high and add the greens in handfuls, along with a couple of pinches of salt, and cook until the greens begin to wilt, 5 minutes.


Step 3

Add the turnips and mushroom broth. Bring to a simmer and cook until the turnips are tender and the flavors have combined, 5 to 10 minutes. Add the beans and Israeli couscous and stir to warm through. Season to taste with salt.


Step 4

Meanwhile, pick the parsley, toss the stems, and roughly chop the leaves.  


Step 5

Ladle the soup into bowls, drizzle with olive oil, and sprinkle with the parsley and green garlic and some Parmesan, if you have any. Grate lemon zest over the top, if you want, and cut the remaining lemon into wedges. Grind with pepper and serve warm, with the lemon wedges for squeezing.

Notes: Due to seasonal availability, you may receive either rapini or escarole. The mushroom broth may arrive frozen for freshness. Store it in the refrigerator to defrost before cooking. If still partially frozen, you can add it to the pot to melt, but you may need to increase the cook time.
