Step 1
Warm the chili in a small saucepan over medium-low heat. Bring to a simmer, and keep warm until ready to eat.
Step 2
Meanwhile, reheat the rice according to the instructions on the package.
Step 3
To serve, peel and dice the avocado, and slice the scallion into thin rounds. Spoon some rice and chili into bowls, and top with the shredded cheese, avocado, scallion, and cilantro leaves!
