Core and slice the pears. In a frying pan over medium heat, melt 1 tablespoon butter. Add the pears and sauté until tender, 5 minutes. Sprinkle with 2 tablespoons sugar and stir to melt and coat, 3 minutes longer.
Meanwhile, in a large bowl, whisk together 2 eggs, 1½ cups buttermilk, and 2 tablespoons melted butter. In a separate bowl, whisk together 1½ cups flour, 2 tablespoons sugar, the gingerbread spice, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon salt. Add the dry ingredients to the wet ingredients and stir until just combined.
Warm a nonstick frying pan over medium heat, and grease with butter or vegetable oil. For each pancake, pour about ⅓ cup batter into the pan, and cook until golden, 2 to 3 minutes per side.
Transfer the gingerbread pancakes to plates, and top with the pears. Drizzle with maple syrup or sift with powdered sugar, if you want more sweetness, and serve warm.Contains: milk, eggs, wheat.
