Preheat the oven to 300°F. Set out a large rimmed sheet pan.
In a large bowl, combine 4½ cups oats, 1 cup coconut, and 1 cup pistachios. In a small bowl, stir together ¾ cup honey or maple syrup, ¾ cup olive oil, and 1½ teaspoons salt. Heat the wet ingredients in the microwave until loose and warm, 30 seconds. Drizzle the wet ingredients over the dry ingredients and stir to coat. Spread the mixture evenly in the pan. Bake until golden and fragrant, stirring once or twice, 35 to 40 minutes.
Let the granola cool on the pan. Sprinkle 1½ cups of the dried cherries over, and mix to combine, breaking up any bigger clumps. Serve right away or transfer to airtight containers and store for up to 2 weeks.
