Step 1

Toast 8 slices of brioche. Pull off a few leaves of butter lettuce, rinse, and pat dry.

Step 2

To build the sandwiches, place the toasted brioche on plates, add a generous scoop of chicken salad and a few pieces of butter lettuce, top with another slice of toasted brioche, and serve.
