Pour the simmer sauce into a deep sauté pan and bring to a simmer, stirring occasionally to prevent scorching. Add a pinch of cayenne, if you want more heat.
Meanwhile, cut the chicken into bite-size pieces. Add the chicken to the pot and simmer until nearly firm to the touch and no longer pink, about 5 minutes. Add the frozen peas and continue to cook until bright green, 2 minutes longer.
Meanwhile, pick a couple of handfuls of cilantro leaves, toss the stems, and chop the leaves. Reheat the rice in the microwave until steamed through and warm, 1 to 2 minutes.
Heap the rice in bowls and spoon the chicken tikka masala over. Sprinkle with the cilantro and serve warm.
