Step 1
Slice the baguette into quarters and then split each piece for filling. Drain the mozzarella and slice it into rounds. Rinse a few handfuls of arugula and pat dry.
Step 2
In a bowl, toss the arugula with a few spoonfuls of vinaigrette, a pinch of salt, and a few grinds of pepper.
Step 3
To build the sandwiches, place the baguette on plates, and layer with a few pieces of mozzarella, a generous scoop of chicken salad, and the dressed arugula. Top with freshly ground pepper and serve.
