Step 1
In a bowl, combine the slaw mix, pepitas and currants, and pickled onions. Pick a couple of handfuls of parsley leaves into the bowl. Drizzle with the caraway crème fraîche, season with a pinch of salt, and toss to coat. Let rest for a few minutes to soften.
Step 2
Transfer the coleslaw to a bowl for serving or pile it onto sandwiches. Store any leftover coleslaw in an airtight container in the fridge for up to 5 days.
