In a saucepan over medium heat, reheat the pork and BBQ sauce until the sauce thickens slightly and the pork is warmed through, about 5 minutes. Season to taste with salt. Set aside and keep warm.
Meanwhile, place the slaw mix in a bowl. Drizzle with 1 teaspoon vinegar, a splash of juice from the pickled onions, and 1 tablespoon olive oil. Season with salt and pepper and toss to coat. Let rest to soften, 5 minutes. Toast the buns.
To build the sandwiches, place the buns on plates and pile with the BBQ pork and coleslaw. Top with a few pickled onions and serve warm.
