In a skillet over medium heat, warm 1½ teaspoons olive oil. Add the jackfruit and ½ cup barbecue sauce, and cook, shredding the fruit with a fork, until warmed through, 8 to 10 minutes. Season to taste with salt. Set aside and keep warm.
Meanwhile, place the slaw mix in a bowl. Drizzle with 1 teaspoon vinegar, a splash of juice from the pickled onions, and 1 tablespoon olive oil. Season with salt and pepper and toss to coat. Let rest to soften, 5 minutes. Toast the buns.
To build the sandwiches, place the buns on plates and pile with the barbecue jackfruit and coleslaw. Top with a few pickled onions and serve warm.
