Autumn Pizza with Delicata Squash and Sage

With pre-made pizza dough from Pizza Politana, there’s no excuse not to make pizza on a weeknight. This autumn number calls on thinly-sliced delicata squash that roasts in the time it takes to roll out the dough!

What You Get
Sliced delicata squash
Pizza Politana pizza dough
Mozzarella
Ricotta
Sage leaves

What You’ll Need
Olive oil
Salt
Chile flakes (optional)

Step 1: Preheat your oven to 500°F, or as high as it will go. 

Step 2: 
Arrange the sliced squash on a sheet pan, and drizzle with bit of olive oil and salt. Bake in the oven for 10-15 minutes or until the squash is just tender. 

Step 3: 
While the squash is roasting, stretch and roll out the pizza dough into a rough circle on a floured surface until it’s about 12” in diameter. (Don’t worry about it being a perfect circle!) 

Step 4: 
Remove the squash from the oven, and transfer squash to a separate plate or bowl. Flip the sheet pan upside-down (careful, it’s hot!) and transfer the round of dough over top.

Step 5: 
Build the pizza! Drizzle the dough with olive oil and a sprinkle of salt, then layer on the squash, whole sage leaves, fresh torn mozzarella chunks, and dollops of ricotta, leaving a ½” border. 

Step 6: 
Bake the pizza for about 15 minutes, or to your desired level of crispiness. 

Step 7: 
When crust is golden brown, remove the pizza from the oven, add another drizzle of olive oil and a pinch of salt, and serve with chile flakes if you’d like!
