This chili is delicious right away, but might even be better a day later, so add this to your “Sunday make-ahead” list—you’ll be thanking yourself at dinnertime all week long. As a bonus, it sneaks in a hearty serving of veggies, practically melted into the sauce where veggie-averse eaters never spot ‘em.

Ground cumin

Canned black beans

Canned kidney beans

Canned cannellini beans

Corn

Canned crushed tomatoes

Sour cream

Tortilla chips


What You’ll Need

Cooking oil

Hot sauce (optional)

Shredded cheese (optional)


Step 1

Roughly chop the onion, 4 cloves of garlic, and 2 bell peppers—no need to be too precise. Heat a large splash of oil in a wide, large pot over medium-low heat. Add the vegetables and cook about 5 minutes, stirring often, until they’re all soft and very tender. Add about 2 tsp of chili powder (more for spice fanatics, less for kids), 1 tsp of cumin, and a generous sprinkle of salt. Stir well to combine and cook about another 2 minutes, until fragrant.


Step 2

Add the drained beans, the corn, and the whole can of tomatoes with their juice. Reduce the heat to low and cook slowly, stirring every so often, for about 30 minutes. The chili should be much thicker. Taste and adjust spices to your preference. (If you’re making this to eat later, let it cool, then refrigerate or freeze in sealed containers and reheat when you’re ready to enjoy it.


Step 3

Assemble bowls of the chili with a dollop of sour cream, and (optional) a sprinkle of any shredded cheese you might have on hand. Serve with tortilla chips and your favorite hot sauce on the side.
