Our neighbor Sequoia Sake's Shochu is a collaboration between them and another of our neighbors,
Seven Stills. They took their Genshu sake, and twice distilled it into this iconic rice spirit. On the nose are aromas of cooked rice, lychee, banana, papaya, almonds and hints of citrus. On the palate are lively flavors that match the aromas, with a more pronounced nuttiness and the citrus coming across more as a zest. This cocktail makes a great Shochu Buck, using 2 ounces of shochu, 1 ounce of fresh lime juice, and 5 ounces of ginger beer over ice, garnished with a lime wedge.
