Don't be fooled by the gnarly attached to this fledgling celery plant: its flavor is anything but! With the delicious sweetness and slight salinity of a celery stalk, but a texture closer to a not-too-starchy potato, Celery Root (aka Celeriac) is a great vegetable for soups, mashes or roasting medleys.
