Based on one of our signature dishes, this skin-on chicken breast roast features a crisp, golden crust with a tender filling of seasonal vegetables. Makes a fantastic centerpiece for an easy yet elegant meal. Don't forget to save leftovers for sandwiches!
Ingredients:
- Skin-on chicken breast, Shallots, Onions, Garlic confit, Italian parsley, Seasonal vegetables (Kale, Swiss Chard, Spinach), Wild Rice, Butter, Salt. Pepper
Cooking Instructions:
1. Reheat the oven to 420F
2. Sprinkle olive oil over whole chicketta, and one teaspoon of salt over the chicketta
3. Roast in oven for 25-35 minutes until instant read thermometer reads 165F
4. Take out and let rest for 10 minutes
5. Remove string and carve to medallions
Tip: the skin should be crispy – if not put back in oven and change oven settings to broil.
