The Santa Cruz and Watsonville region is world-renowned for its artichoke production, and Rodoni Farms has led the way in growing them organically. Artichokes are surprisingly versatile. While they are easily enjoyed by boiling with lemon and eating with a garlic aioli, one should experiment with soups, dips and using the hearts to top a home baked pizza. Baby Artichokes are unique in that they're generally chokeless, so you can use more of it. Remove the first few layers of petals, the cut the top half inch off of the artichokes, and then use the rest of the artichoke in a number of different ways. One of our favorite ways is to slice it very thin and sauté the slivers.
