The Ahi is sourced through my wholesale partners, Aloha Seafood, who specialize in ESSSP (Environmentally Safe & Sustainable Seafood Products). The Ahi are caught off the coast of the Maldives Islands from a single fishery, using hand-line techniques, recognized by Monterey Bay Aquarium Seafood Watch as a "Good Alternative".
Their processing plant which is adjoined to the International Airport, enables the company to airfreight Maldives Ahi overnight to ensure optimal freshness.
