Xulo is an Oakland based brand by chef Michael de la Torre. Using recipes that have been passed down for generations, he makes authentic, handmade tortillas just like his grandmother would make in the the style of Sonora, Mexico. The organic flour used in his tortillas is grown and milled in Utah where wheat has grown for over 150 years. Additionally, the butter and animal fats are local, coming from Marin Sun Farms, Straus Creamery in Petaluma and Encina Farms in Middleton. The Marisal Salt used in his tortillas hails from Colima, Mexico. The utilization of animal fats helps reduce waste from butcheries - these byproducts are often discarded. Xulo's mission is to serve a flour tortilla that transcends all perceived notions using the highest quality ingredients available to as many as possible. All the while, providing an inclusive, positive work environment that takes care of its workers in all capacities.
