Sad desk lunches be damned! This super simple salad balances the creaminess of avocado with the acidity of grapefruit. Because kale is so hearty, you can dress this salad in the morning without it getting wet and wilt-y. 
  • Avocados from Rick's Seasonal Produce, 1lb (~2 avocados)
  • Grapefruit from Rick's Seasonal Produce, 1 grapefruit

Recipe
Serves 4

Ingredients
  • 2 avocados, sliced
  • 1 grapefruit, supremed
  • 1 bunch lacinato kale
  • Juice of two lemons
  • 1/4 cup olive oil
First make the dressing. Combine the lemon juice and olive oil in a jar, and season with salt and pepper. De-stem the lacinato kale, finely shred it, and toss in a bowl with the dressing. Let it marinate for bit—the acidity in the lemon will break down the toughness of the kale. Add the avocado and supremed grapefruit, and enjoy!

Grass Fed Beef Bone Broth Kit
Bone broths are predicted to be one of the greatest health trends of 2015––and for good reason! Slow cooking grass fed beef bones with veggies yields a delicious, and highly nutritious elixir. You can use the broth as a base for soups or cooking grains––but our favorite way to consume it is in a mug! You'll be surprised how nourishing and filling a cup is. 
  • Grass Fed Beef Bones from Gonsoulin Land & Cattle, 2.25 lbs
  • Orange Carrots from Up To Grow Good, 1 lb
  • Yellow Sweet Onions from Hollygrove, 1 lb
  • Rosemary from Bell Floricultural Society, 1 bunch
Tips: 
  • For extra flavor roast the bones at 350° for one hour before adding to your stock pot 
  • Simmer for at least 8 hours, but up to 48 -- to extract as much goodness as possible (it's a great time to bust out the crockpot)
  • Customize to your taste - add extra veggies like garlic, shallots, bay leaves, and herbs (thyme, rosemary, oregano, parsley)  
  • Add 2 tablespoons of apple cider vinegar to help draw gelatin from the bones 
  • Once strained and cooled, a layer of fat will rise to the top - you can skim it off and use it as a cooking fat or simply heat and reincorporate. 
  • Let cool on the counter before topping off with the lid and transferring to the refrigerator (or freezer, if you don’t plan to use/drink within a week).

Recipe: 

  • 1 pound shrimp
  • 1/4 teaspoon freshly ground pepper
  • 1 medium zucchini
  • 1 small yellow summer squash
  • 1 onion
  • Mushrooms
  • 1/2 cup chopped fresh flat-leaf parsley
  • 2 minced garlic cloves
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons fresh lemon juice
  • 3/4 teaspoon coarse salt
Directions:
  • Soak 12 wooden skewers in water for 30 minutes to prevent charring.
  • Make the shrimp: Heat grill to high and brush grates with oil. Thread shrimp onto skewers, alternating with vegetables. Season with salt and pepper and grill for 7 minutes total, flipping every minute.  Whisk together parsley, fresh lemon juice, garlic cloves, extra-virgin olive oil and coarse salt. Drizzle sauce over kebabs.

Making your own fresh, delicious meal couldn't be easier with this ceviche recipe. The key ingredient in any ceviche is the freshness of the fish, and we've got that covered with our local partners, NOLA Fish House. This recipe kit includes:
  • Gulf Fish Of The Week: First Mate's Favorite from NOLA Fish House, 1 lb
  • Micro Cilantro from City Greens, 1 container

Recipe
Serves 4-6
  • 1 lb of Gulf Fish (white fish, tuna, mahi mahi, red snapper, etc)
  • 1 bunch cilantro, chopped
  • 1 red onion, finely diced
  • Juice of 2 lemons (or limes)
  • Salt & pepper
Unwrap the fish and put it in the freezer until it's pretty firm, about 15 minutes. Chilling it will make it easier to slice and dice. Put the fillet on a chopping board, and cut into a 1/4" thick dice. Add to a bowl with the cilantro, red onion, citrus juice, and season with a big pinch of salt and pepper respectively. Add avocado and/or jalapeño peppers for an extra zing.

Cover and refrigerate for an hour. We suggest pairing with fresh tostada chips & avocado.
