Buckwheat is a naturally gluten-free grain-like seed that has been used in traditional noodle making for centuries. High in protein and fiber, these soba-style noodles are best when simply prepared allowing the nutty flavor and aromas of buckwheat to come through. Excellent in both hot or cold preparations, these quick cooking noodles have a great chew, clean flavor, and don’t stick or clump together when prepared according to the package instructions. Enjoy with a miso based broth for a quick and filling soup or alongside roasted veggies and your preferred protein with a thin dipping sauce.

To Prepare: Bring a pan of water to a rolling boil. Add noodles slowly until submerged. Bring back to the boil and then reduce to medium heat. Cook for 4-5 minutes. Drain noodles in a colander and then refresh with cold water to prevent sticking.
Simple Dipping Sauce
Combine ingredients and adjust to taste by adding more soy sauce for a richer flavor and/or a touch of honey to balance out salinity. Serve with chilled noodles. This sauce makes a great base for more creative preparations: try adding fresh ginger, garlic, and/or chilies; boost acidity with lime juice or rice wine vinegar; or our favorite, with a heavy dose of fish sauce to really bring out the umami flavors.
