I used to eat traditional pastas and rices several days a week. In the Spring of 2014, I decided to make a change and try the Paleo diet. The first thing I started making while on the new diet was cauliflower “rice." It was tasty, healthy, and had the utility of rice without the guilt. After having success with the rice, I began making veggie noodles. In no time, vegetables became the main ingredient in many of my dishes.
Unfortunately, making the noodles and rices was laborious, messy, and resulted in a lot of waste. I wished I could go to the grocery store and pick up a pre-packaged, ready-to-eat veggie noodle or rice. I searched for weeks and, after coming up empty every time, the lightbulb went off.
