While the concept of healthy and nutrient-dense fats may seem paradoxical, Megan Reamer, founder of Jackson’s Honest and mother-of-four, has witnessed first hand the transformative power of including certain fats in her family’s diet. When her newborn son developed a severe and incurable illness in 2002, as any mother would do, she became committed to improving her son Jackson’s quality of life the best she could. Having already tried countless dietary interventions, the Reamers were pleasantly surprised when Jackson’s health began to stabilize in response to a high-fat diet: he was sleeping through the night, gaining weight, and tertiary symptoms related to his condition went away.  

Drawing on his degree in chemical engineering, Megan’s husband began researching the composition of various fats and their biological importance. What he discovered revealed that almost everything their family believed about fats was quite wrong. Traditional, healthy fats that had been consumed for centuries (like cod liver oil, tallow, lard, coconut oil, and unpasteurized butter from grass-fed cows) were a source of essential nutrition. Whereas inexpensive industrially manufactured vegetable oils invented in the past 100 years, and all too common in most snack foods, were a source of real nutritional aggravation and equally deserving of a bad rap. What followed was an honest attempt to make everything their family consumed “fat friendly,” eventually leading the Reamers to start experimenting with frying their own potato chips in coconut oil. The outcome? The coconut-oil chips tasted like an actual potato—rich, deep, and aromatic. An instant family favorite.

While the intention was never to start a snack food company, with 85% of Americans consuming potato chips at least once every three weeks, the positive-reception their chips received from friends and neighbors made it clear that any dent they could make in the almost 10 billion-a-year potato chip market would be a chance to re-introduce healthy fats into the food chain and diets of other families.
