Beloved in French cuisine, Tarragon adds a licorice mystique to any dish. It pairs naturally with chicken and fish, but it can also be infused into vinegar for dressing. Fresh Tarragon has a far more intense flavor than dried, and when heated, is stronger still, so a little goes a long way. Time to experiment!
