Organic Stokes Purple Sweet Potato

Somewhat drier and starchier than the more common, orange-fleshed Garnet variety, the purple flesh of the Stokes darkens as it cooks, making them perfect for adding a color splash to your sweet potato fries, mashed sweet potatoes or simply roasted with some of their orange- and white-fleshed counterparts.
