The earliest and most delicately flavored of our winter squashes, Delicata lives up to its name. A light texture cooks quickly and packs a sweet intensity beyond its small size. With skin so tender it can be eaten, these cook up best when slow-roasted or baked in the oven, though they also fare well when pan-fried with rosemary.
