Enchilada Sauce

Mmm, enchiladas! The best back-pocket meal of all. Paired with a casserole dish, some leftovers, and a pile of yummy tortillas, this Enchilada Sauce will make you feel like a true kitchen hero. Whether you've got leftover cooked beans, veggies, meat, or even fish, just roll it up in tortillas and arrange them seam-side down in the casserole pan. Pour the enchilada sauce on, shred some cheese (dairy-free cheese melts well too!) over the top, and bake until melty and bubbly.
