A traditional Sardinian pasta, fregola is similar to North African couscous in flavor but has a somewhat firmer texture. It's often considered a soup pasta, but we think it's also delicious as the base of a grain bowl, pasta salad, or scooped up next to a stew or braise where it can help soak up all those delicious sauces. Cooked Fregola Pasta is ready to eat cold or hot.
