Butternut Cubes

We start with sweet winter butternut squash, then peel 'em and cut 'em up into easy-to-roast cubes. Toss with olive oil and salt, spread on a baking sheet, and toss into a hot oven at 400° for 20-25 mins or until fork-tender.
