Tony and Julie Hook have been making cheese in Wisconsin since 1976. They use the highest quality milk from local family owned dairy farms with guarantees of outdoor access for their cattle. The Hook's 5 Year Aged Cheddar has a complex and rich flavor with the classic sharp and tangy quality you would expect in a Wisconsin cheddar. The 5 years of age create just a hint of mild sweetness from caramelized milk sugars, as well as some crystallization to give the cheese some bolder umami flavors. Pair with a Cabernet Sauvignon or an IPA.
