Developed in the 1970s through Rutgers University’s apple-breeding program in central New Jersey, this apple is a cross between Mollies Delicious and July Red. Its small size, chewy skin, and snappy acidity points to the crabapples in its heritage, but you’ll also find Sebastopol's renowned Gravenstein apple in Strawberry Parfait’s family tree. Strawberry Parfait holds its pink color when cooked, making it a good choice for applesauce or open-faced tarts or galettes.
