They use high-quality fish sauce that is only made up of fermented anchovies, which creates a wonderful umami flavor. The small amount of sugar in this recipe is only there to balance out the spiciness of the Korean chili flake. Since traditional fermentation methods are used, the sugar is consumed by the natural bacteria giving this kimchi a truly authentic taste.
