Pedregal De Inza has a comforting quality with flavors of Agave, Maple syrup and Melon which develops into additional notes of green apple with subtle hints of dark chocolate and grapefruit that sneak in the finish. This coffee is grown by Angel Alfonso Ariza. Pedregal De Inza refers to the town and municipality of Inza, in the Cauca Department, Colombia where his farm is located.
Angel Alfonso Ariza has 4.5 hectares in Pedregal de Inza de Cauca which is an area located just across the departmental border with Huila. AAA grows mostly Caturra although has a small dose of both Bourbon and Typica mixed in with it. His farm is located at 1775 masl. Processing is standard for the region - manual depulping of the cherries done on a hand crank machine, fermentation in a tiled tank for approximately 18 hours, washing in the same tank and then drying on raised parabolic beds.
