We are really excited to offer coffees from Fazenda Ambiental Fortaleza
(FAF) for the second year in a row. In the context of Brazilian
monoculture coffee on a large scale, Marcos and his allied coffee
growers are bucking this trend. Lazer-beam focus on quality and a
commitment to passive organic farming (Marcos believes that coffee
should grow alongside other plants) have translated into operating in
the black versus formerly losing money. One example of FAF’s commitment
to quality is experimenting with drying times for their coffees. FAF has
found that coffee that dries over a longer period of time maintains
more structural integrity, which translates into green beans lasting
longer and tasting better months later. This coffee is smooth, simple,
& straightforward. Milk chocolate, toasted almond, and dried apricot
come together to produce a very pleasing cup.
