Nicola Fiasconaro is the owner and head pastry chef of Fiasconaro, a bakery making panettone with all-Sicilian ingredients. It was founded by his father over sixty years ago as a bakeshop in the main square, Piazza Margherita. Nicola grew up working with his father in the bakery and spent years working as a pastry chef all over Italy. When he returned home, he incorporated the techniques he'd learned, including a 36-hour rise period for the panettone dough.
