Sea Beans (samphire,
pickleweed, sea asparagus, salicornia) are a
salt-tolerant succulent that grows wild in the United States, Europe, and South
Asia. It grows along the coast and is wild harvested in mid-summer. Sea Beans
are a natural source of sea salt and are delicious raw, blanched or sautéed.
Add them raw to salads, sauté and pair with seafood or blanch them and toss
with pasta. Sea Beans can be stored in the refrigerator in plastic for up to
two weeks. To revive wilted Sea Beans simply soak them in ice water for five
minutes.
