된장: DoenJang (AKA Korean miso) is one of Korea's most beloved condiments. Made with GMO free soy beans and salt, nothing else. We use Jookjangyeon DoenJang brand because we trust their traditional artisan material and process they use to make their products. It is a great source of essential amino acid, Vitamin B12 and Vitamin K2 and is believed to carry anti-carcinogenic properties. One table spoon of soup with kelp will make a hearty soup like 된장찌게: DoenJangJjigae.
Fermented bean paste is an important component of Ellen's Vegan Kimchi. Add 3 table spoon for 5lbs of cabbages.
http://www.jookjangyeon.com/ is in Korea so here's some translation regarding their DoenJang: "without the convenience conventional farming for the beans, with naturally sun-dried salt which drained salt-water for 3 years in Shin-An Bay in South Korea, from the straws that ties maejoo (bean cultures), to the fire wood that ignites heat for processing, JookJangYeon has developed the product quality that can't be compared to others without the patience and time".
