Edison Grainery's Organic Green Split Peas are (of course!) perfect for a classic split pea soup, but they can also be substituted for lentils in dishes like dal, used like chickpeas in a hummus-style puree, or folded in with other veggies for fritters, samosas, veggie burgers and falafel. We recommend about a 4:1 ratio of water to split peas simmered for about 45-60 minutes.
