This California-grown avocado is a Mexican-type variety that was first developed and is most popular in Israel, but was brought to the United States in 1954. The Ettinger is a thin- and green-skinned avocado, so you'll know its ripe when it gives slightly to light pressure. The Ettinger is slightly milder in flavor than the more common Hass Avocado, and it's rich in Vitamins B, C, and K, and potassium.
Ettinger avo pro-tip: though these avos are sometimes delivered to your door a bit underripe to ensure they don't get squished, you can ripen them to perfection by putting them in a paper bag somewhere in your home that's a bit warmer than room temperature. Add an apple to the bag to quicken the ripening--apples release ethylene as they ripen, which helps the avocados ripen quicker.
