Each chicken is approximately 2.5-2.75 pounds, air-chilled and cryo-vac'd, then flash-frozen to preserve the highest quality and freshness.
These chickens spent three years roaming our pastures and laying eggs. This extended time on pasture gives them several tremendous qualities: they have deeply flavorful meat, and a layer of bright yellow fat. These are the quintessential chicken-and-dumpling birds and take well to any kind of low, slow, wet cooking. In our house, we put a whole bird in a large pot, fill it with water, celery, onions, and carrots, and bring it to a very slow boil. After an hour or so, we pick all the meat off, and put the bones back in. We get tremendous bone broth this way, and delicious chicken to add to any dish.
The hens' diet is supplemented with a high-quality feed free of GMOs, corn, soy, and antibiotics. Their healthy outdoor lifestyle and balanced and diverse diet produces a juicy, deeply flavorful bird that truly tastes like chicken.
