A cut that needs no embellishment: beef tenderloin (where Filet Mignon is cut from) is premium for a reason. Outstandingly tender and flavorful, it's undeniably special and festive. We like it simply rubbed with herbs, garlic, salt, and pepper. Sear in a cast-iron pan then finishes in a hot oven (about 425ºF) until just medium-rare.
