Lemongrass is a perennial grass used as an herb to make teas, add flavor to soups, and lightness curries. The delicate and mouth watering flavor is indeed reminiscent of lemon, but without the acidic bite. Bruise the grass with a mallet to release the fragrant oils, and chop coarsely to use in stocks, sauces, and curries.
