An Italian classic, this four-ingredient sausage-and-greens pasta dish lets the bold flavors of good ingredients shine.
Contains: milk, eggs, wheat. Note: your sausage may arrive frozen! Thaw overnight in the refrigerator, or for same-day use, place the sealed package in a bowl of cool water and change out the water every 15 or 20 minutes until the sausage is thawed, usually in about an hour.
What You Get
Baia pasta
Sonoma County Meat Co. sweet Italian sausage
Sautéed garlicky rapini
Grated cheese
What You'll Need
Olive oil
Salt
Step 1
Bring a large pot of salted water to a boil. Cook pasta according to instructions on the package until al dente. Reserve ¼ cup of the pasta water and strain the pasta. Set both aside.
Step 2
Meanwhile, heat a glug of olive oil in a wide saute pan over medium heat. Once the oil is hot, add the sausage to the pan and break into smaller pieces with a spoon. Fry until golden and crispy, about 5 minutes, stirring occasionally. Add the rapini to the pan, stir to combine, and reduce the heat to low.
Step 3
Add the pasta to the pan with the sausage and rapini along with the pasta water and half of the cheese. Stir to combine, and cook for 3 minutes until the pasta water, oil and cheese come together into a sauce. Serve pasta with a sprinkle of cheese to garnish, and dig in with a side salad!
