Step 1

Cook the bacon in a cast iron skillet by starting with a cold skillet. Lay the slices in a single layer, then turn the heat to medium-low. Flip frequently as the fat renders slowly, and remove the bacon just before it is fully crisp to prevent burning, 7-8 minutes. When done, set aside on a paper towel-lined plate. Alternatively, bacon can be cooked on the grill, but cook over indirect heat to avoid flame flare-ups and burning.

Step 2

Wash the lettuce, slice the tomatoes and the red onion, and arrange on a platter. Toast the buns if desired in the oven or on the grill for 2 minutes.

Step 3

TO COOK THE BURGERS IN CAST IRON: Heat a large cast iron pan to medium high, so the burger will sizzle when placed in the pan, but not to the point of smoking. No additional fat or oil is necessary to cook burgers. Allow the burger to cook until a crust is formed on the outside and then flip — about 4 minutes on each side for medium. 5-6 minutes on each side for medium well.

Step 4

TO COOK THE BURGER ON THE GRILL: Preheated the grill to 450℉. Keep the burgers refrigerated until ready to cook. Season with salt and pepper just before cooking. Burgers should sizzle when placed on the grill. Allow to cook until a crust is formed on the outside and then turn — about 4 minutes on each side for medium. 5-6 minutes on each side for medium well (for charcoal/wood grilling: be sure to burn charcoal or wood down to coals/embers to avoid bitterness).

Step 5

Add the cheese 2 minutes before the burgers are done cooking. When ready, assemble burgers with buns and bacon. Serve with the lettuce, onion and tomato. Add additional toppings if desired; including wasabi special sauce, ketchup and mustard. Serve immediately.
