This balanced margarita picks up a lick of sweet from pineapple, kicks in heat from jalapeño, and mellows it all out with tepache, the fermented drink made from pineapple rinds.

What You'll Need

Step 1
To make the sweet-and-spicy rims, on a plate, combine 2 teaspoons sugar, 2 teaspoons salt, 1 teaspoon cayenne, and 1 teaspoon lime zest. Moisten the rims of 2 glasses with a pineapple chunk and roll the rims in the sugar mixture to coat.
Step 2
In the base of a cocktail shaker, muddle ¼ cup pineapple chunks and 1 teaspoon finely chopped jalapeño. Transfer to the prepared glasses. Fill the glasses halfway with ice.
Step 3
In the cocktail shaker, combine 4 ounces tequila, 3 ounces orange juice, and 1 ounce agave. Shake well and pour over the ice. Top off with the tepache and serve cold.
